
Pasta Primavera
4 servings
Ingredients:
2 Tablespoons extra virgin olive oil
4 cloves garlic, minced
1 medium red onion, sliced
2 carrots, coarsely shredded
1 small bunch broccoli, cut into florets
1 pound cooked whole grain penne
Fresh Parmesan cheese, grated
Begin cooking penne. Meanwhile, in a large skillet heat olive oil; add garlic and sauté until soft. Add onion, separate slices and sauté additional 2 minutes. Add carrots and broccoli. Cover and steam stirring occasionally until vegetables are crisp tender. Add salt and pepper to taste. Toss vegetable mixture with cooked penne and sprinkle with parmesan cheese. Serve hot.
